Cream Cheese Squares
For my first post, I’m just going to jump in and share a favorite recipe, Cream Cheese Squares. Friends, this is one of my very favorite desserts, and it couldn’t be easier to make! Also, this post is going to have lots of exclamation points. These are that good, and yes, I’m that excited about it!
This recipe is from a church cookbook that I bought several years ago. The first time I tried it, I was hooked. My brother took a look and said, “those are ooey-gooey bars!” and another friend calls them chess squares. I’ve also heard it called Butter Cake. For simplicity, we’re going with the title from the cookbook and calling them Cream Cheese Squares. Whatever you call them, they are decadent and so worth trying.
I only make them a few times a year because I have a tendency to eat the entire pan of them (insert shameful face here….) hahaha!
Ingredients:
Crust:
- 1 box of butter cake mix
- 3/4 stick butter, very soft (I use salted butter, and if you want to throw in the whole stick, that’s fine too!)
- 1 egg
Filling:
- 1 8oz package cream cheese, softened
- 1 16 oz package powdered sugar
- 2 eggs
- 1 tsp vanilla
Mix the crust ingredients together until a thick dough forms and press into the bottom of greased pan (I use 9×13 glass baking dish, but I’ve also used a cake pan). In a bowl, add the filling ingredients and beat with a hand mixer until combined and there are no lumps from the cheese or sugar, then pour over the crust. Bake at 325 for 45 minutes to an hour, or until crust is golden and top has set. The top might still wobble a bit as you pull it from the oven-but as it cools it should firm enough to be cut into squares.
Crinkly tops and a chewy, buttery crust-get in my belly!
