Let’s have some cake and a story. I’ve been thinking for a while about sharing some family recipes on here. Not just my own, but those that my mom and aunts are known for, even my grandmother and great aunts. I’ve shared before that I want this blog to be a place that my girls can come back and look at for years to come, a treasure chest of pictures and stories from their mama. But I would also love for this to be a place for the family to come and find those cherished recipes that they remember from gatherings past and present.

So, May is my birthday month. I turned 35 this year. And every year for my birthday, my mom bakes me a cake. Almost every year since I was 15 or so, I’ve been requesting this cake. Heavenly Hash. It’s definitely a favorite among myself and my siblings. I only have it once a year though, and I’ve actually never made it myself! So today I’m switching things up and sharing my mom’s recipe.

Now real life friends and family may read this and be shocked-thinking to themselves KATIE DOESN’T LIKE CHOCOLATE CAKE! And they would be right! I don’t like chocolate cake. But this cake is different! It’s much more like a brownie base with pecans (which you all know I adore brownies!), topped with marshmallows and an icing that tastes like chocolate fudge. How could this cake not be a favorite!

Heavenly Hash Cake

Prep Time: 15 minutes
Cook Time: 35 minutes
Course: Dessert

Ingredients

  • 4 eggs
  • 2 cups granulated sugar
  • 1 cup butter, melted
  • 2 tsp vanilla
  • 1/4 cup cocoa powder
  • 1.5 cups self rising flour
  • 2 cups pecans, chopped
  • 1 bag mini marshmallows

Icing

  • 1/4 cup butter, melted
  • 1/2 cup heavy cream
  • 1/4 cup cocoa powder
  • 1 lb confectioner's sugar

Instructions

  • Preheat oven to 325 F.
  • In a microwave safe bowl, melt the butter and set aside.
  • In a large mixing bowl, beat the eggs slightly, then stir in sugar, butter, and vanilla.
  • Add flour and cocoa powder, stirring until combined, then add in pecans.
  • In a 9 x 13 cake pan or baking dish, spray with baking spray and add the cake batter. Bake for 35 minutes, then remove from oven and immediately cover with the marshmallows.
  • While the cake is baking, prepare the frosting. Combine all ingredients and pour over the cake after the marshmallows have been added.
